Bajra is available in every part of country and is very good to eat in winters. Bajra Vadi is a mouth watering snack which can be served with hot tea.

Bajra Vadis recipe - How to make Bajra Vadis

Ingredients
2 cups bajra (black millet) flour
3 to 4 garlic (lehsun) cloves , finely chopped
1 bunch coriander (dhania) leaves , finely chopped
1 tsp cooking oil
a pinch asafoetida (hing)
salt to taste
1/2 tsp red chilli powder
2 tsp finely chopped green chillies
1 tsp ginger (adrak) paste
1/2 tsp sesame seeds (til)
2 cups water
a pinch baking soda

For The Tempering
few curry leaves (kadi patta)
1 tsp mustard seeds ( rai / sarson)
1/2 tsp sesame seeds (til)
1 tsp cooking oil for shallow frying
Method
    Method
  1. Mix together all the ingredients for the batter except the baking soda using enough water to make a thick batter.
  2. Just before steaming, add the baking soda and add 2 tsp of water over it.
  3. When the bubbles form, mix gently.
  4. Pour the batter immediately into a greased thali and shake the thali clockwise to spread the batter in an even layer.
  5. Steam for 15-20 minutes or till the vadi is cooked.
  6. Cool the vadis and cut in diamond or triangular shape.
  7. Heat oil in a small pan and add the mustard seeds. When the seeds crackle, add the sesame seeds and curry leaves while stirring continuously.
  8. Put the vadis in the pan and stir for 1-2 minutes.
  9. The bajra vadi is ready to serve.
